Banana Muffins

For 6 muffins:

Ingredients

  • 65g unsalted butter, softened (out of the fridge a few hours before needed), plus extra 5g for greasing the muffin cases
  • 30g (1.5 heaped dessertspoons) soft dark brown sugar
  • 1 flat tsp cinnamon
  • 80g self-raising flour
  • Third of a tsp (2g) baking powder
  • Pinch of salt
  • 1 medium egg
  • 1 small very ripe banana – about 100g skin-on weight
  • 30g chopped dried dates, dissolved into 25ml boiling water
  • 1 dessertspoon rolled oats, for the top
  • Paper cup cases
