- 65g unsalted butter, softened (out of the fridge a few hours before needed), plus extra 5g for greasing the muffin cases
- 30g (1.5 heaped dessertspoons) soft dark brown sugar
- 1 flat tsp cinnamon
- 80g self-raising flour
- Third of a tsp (2g) baking powder
- Pinch of salt
- 1 medium egg
- 1 small very ripe banana – about 100g skin-on weight
- 30g chopped dried dates, dissolved into 25ml boiling water
- 1 dessertspoon rolled oats, for the top
- Paper cup cases
