Samosas for Diwali


For 6 samosas:

 100g sweet potato, cubed

40g leeks

1 tsp (6g) chopped ginger

1 garlic clove, crushed

Third of a tsp ground cumin, turmeric, nutmeg

Large pinch chilli flakes (optional)


1 tsp (5g) dessicated coconut (not for anyone with sesame allergy)

50g frozen petits pois

5g coconut oil, or olive oil

15ml Greek yoghurt


80g filo pastry, cut into strips 6-7cm wide

30g butter

Poppy seeds for topping (optional)

40ml Greek yoghurt

40g cucumber

A few mint leaves
