Ingredients, for 6 cupcakes

  • 75g unsalted butter, softened (out of the fridge for a few hours in advance)
  • 75g caster sugar
  • 1 large egg
  • 75g self-raising flour
  • third of a tsp baking powder
  • Few drops of vanilla essence
  • Zest of half a lemon
  • Paper muffin cases

For the top:

  • 15g caster sugar mixed with juice of half a lemon
