Latkes for Chanukah

Jewish people eat oily foods at Chanukah to remember the miracle of the tiny amount of oil that lit the Menorah (a kind of lamp) in the Temple for eight whole days when the Jews overcame oppression.

Ingredients – for 6 latkes

  • 150g new potatoes (about 3 medium)
  • 1 spring onion
  • Quarter of a flat tsp salt
  • 25g self raising flour
  • Third of a large egg (20ml)
  • 8ml vegetable oil

For the apple sauce:

  • Quarter of a Bramley (cooking) apple, peeled and cored
  • 15g caster sugar
  • 5g butter

Plus 25g Greek yoghurt or crème fraiche to dollop over the top
