Honey and orange cakes for the Jewish New Year

The Jewish New Year falls in September and people eat honey cake to celebrate, and to represent a sweet year ahead.  They also sing songs and dip pieces of apple into honey.

For 6 cupcakes (or triple the recipe for a 2lb loaf tin): –

  • 65g self-raising flour, with 6g (not more) bicarbonate of soda stirred in
  • half tsp each of ground cinnamon, mixed spice and ground ginger
  • 40ml orange juice
  • 1 medium egg
  • 45ml runny honey
