Honey cakes for the Jewish New Year

The Jewish New Year is in September, and Jewish people eat honey cake to wish for a sweet year ahead.  Songs are sung, and apple is dipped into honey.

For 8 cupcakes (or triple the recipe for a 2lb loaf tin): –

  • 100g plain flour
  • half tsp each of ground cinnamon, mixed spice and ground ginger
  • 30g caster sugar
  • 65ml runny honey
  • 40ml sunflower oil
  • 1 medium egg
  • 40ml orange juice with exactly 3g (not more) bicarbonate of soda dissolved into it
