Ingredients

  • 2 soft tortilla wraps

For the spicy beans:

  • 60g black beans, drained weight (quarter of a tin)
  • 2 dessertspoons olive oil
  • 2 tsp tomato puree, mixed with 1 dessertspoon water
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 pinch chipotle chilli flakes
  • 1 clove garlic
  • Half tsp salt

For the guacamole:

  • Third of a ripe avocado
  • Shaving of red onion
  • A few coriander leaves (optional)
  • Squeeze of lime juice
  • A few drops of tabasco sauce (optional)
  • Salt

Other fillings:

  • Sixth of a red pepper
  • 30g frozen sweetcorn, defrosted
  • 2 ripe cherry tomatoes
  • 20g soured cream
  • Quarter of a spring onion
  • 20g cheddar cheese, grated
  • Small chunk of iceberg lettuce
