Fajitas
Ingredients
- 2 soft tortilla wraps
For the spicy beans:
- 60g black beans, drained weight (quarter of a tin)
- 2 dessertspoons olive oil
- 2 tsp tomato puree, mixed with 1 dessertspoon water
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 pinch chipotle chilli flakes
- 1 clove garlic
- Half tsp salt
For the guacamole:
- Third of a ripe avocado
- Shaving of red onion
- A few coriander leaves (optional)
- Squeeze of lime juice
- A few drops of tabasco sauce (optional)
- Salt
Other fillings:
- Sixth of a red pepper
- 30g frozen sweetcorn, defrosted
- 2 ripe cherry tomatoes
- 20g soured cream
- Quarter of a spring onion
- 20g cheddar cheese, grated
- Small chunk of iceberg lettuce
