Eve’s Pudding

Ingredients, for two large or three small portions 

  • 1 Bramley cooking apple, weighing about 260g
  • A little lemon zest
  • Third of a tsp cinnamon
  • 2 flat dessertspoons/15g caster sugar

For the sponge:

  • 65g unsalted butter, at room temperature (taken out of the fridge a few hours in advance)
  • 5 rounded dessertspoons/50g caster sugar
  • Few drops of vanilla essence
  • 1 medium egg
  • 65g self-raising flour
  • Pinch of salt
