Christmas Ginger Log

Ingredients – serves 3

  • 85ml whipping cream
  • 5g/1 dessertspoon icing sugar
  • Few drops of vanilla essence
  • 50ml orange juice
  • 1 tsp ginger syrup, from a jar of stem ginger
  • Half a banana
  • 7 gingersnap biscuits (75g)
  • Half a Flake and a little stem ginger, chopped (optional), for the top
  • A cake sparkler or couple of birthday candles to light at home (adult) before serving
