Carrot cake

Ingredients

Makes 6 deep cupcakes or one small cake

  • 95g plain flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 70g brown sugar
  • 90g finely grated carrot (from 1 large, peeled carrot)
  • 50ml veg oil
  • 1 medium egg
  • 70g drained weight crushed pineapple
  • Small handful raisins (optional)
  • Few drops vanilla essence

Icing

  • 35g soft unsalted butter
  • 35g cream cheese
  • 35g icing sugar
  • Few drops of lime, orange or lemon juice
