Ingredients
For the pasta and the filling:-
- 4 tubes (45g) cannelloni pasta (you could use lasagne if you can’t get hold of cannelloni..)
- 65g chopped onion
- 60g/third of a carrot (no need to peel)
- A small piece of celery (about a sixth of a stalk)
- 65g sweet potato, peeled and sliced
- A little fresh thyme
- 55g/about one and a half vegetarian sausages, roasted in a little olive oil
- 2 dessertspoons olive oil
- 1 teaspoon umami paste
- 40g ricotta
- 20ml/third of a medium egg
For the sauce:
- 120ml tinned chopped tomatoes
- 40ml strong vegetable stock
- 1tsp (from one large clove) fresh crushed garlic
- A few leaves of torn basil
- Pinch of sugar
For the top (optional):
- A little grated cheddar, Pecorino or Parmesan
