For the pasta and the filling:-

  • 4 tubes (45g) cannelloni pasta (you could use lasagne if you can’t get hold of cannelloni..)
  • 65g chopped onion
  • 60g/third of a carrot (no need to peel)
  • A small piece of celery (about a sixth of a stalk)
  • 65g sweet potato, peeled and sliced
  • A little fresh thyme
  • 55g/about one and a half vegetarian sausages, roasted in a little olive oil
  • 2 dessertspoons olive oil
  • 1 teaspoon umami paste
  • 40g ricotta
  • 20ml/third of a medium egg

For the sauce:

  • 120ml tinned chopped tomatoes
  • 40ml strong vegetable stock
  • 1tsp (from one large clove) fresh crushed garlic
  • A few leaves of torn basil
  • Pinch of sugar

For the top (optional):

  • A little grated cheddar, Pecorino or Parmesan
